Malic acid, also known as apple acid, is responsible for the tart taste of unripe apples, but many other plants also contain malic acid. This acid is pure DL-malic acid, which consists of a 1:1 mixture of D- and L-forms. In nature, L-malic acid is found in unripe fruits such as apples, quinces, and grapes. The D-form is synthetically produced, but can be converted into L-malic acid by enzymes in the human body. In its pure form, malic acid is a colourless and odourless powder that is easily soluble in water. Malic acid is easy to dose and can be integrated into food products without significantly altering their consistency.
Usage
Malic acid is primarily used as a food additive (E 296) and has a wide range of applications in the food industry, including as:
- Acidulant: Due to its distinct tart flavour, it imparts a noticeable sour note to foods. For example, confectionery, beverages, fruit juices, and jams are given a tangy freshness.
- Preservative: Inhibits the growth of microorganisms and helps preserve the freshness of processed foods.
- Antioxidant properties: Supports antioxidants and inhibits enzymes that cause browning in freshly cut fruits and vegetables.
Malic acid is also used in the cosmetics industry, for example in peels to gently remove dead skin cells.

Avoid dust formation. Malic acid should be stored tightly closed at room temperature in a dry, well-ventilated place. Keep away from heat, hot surfaces, sparks, open flames and other ignition sources.
