Properties and effects
Guar gum, known as E 412, is a natural food additive with remarkable thickening properties. Even small amounts are enough to make liquids viscous. This special guar gum has a viscosity of 5000 cps and exhibits interesting behaviour under the influence of shear forces:
- When agitated (shaking, stirring), it becomes thinner
- When at rest, it regains its original viscosity
An additional advantage: it dissolves easily in cold and hot water.
Multiple areas of application
Guar gum is used in numerous foods:
- Soups and sauces: Improves consistency and stability
- Dairy products and ice cream: Provides creaminess and prevents ice crystal formation
- Jams and preserves: Optimises texture
- Meat products: Binds free water
- Baked goods: Extends the freshness of bread
Notes
Guar gum can be used in combination with other thickeners such as xanthan gum or locust bean gum. We recommend not using more than 2 % in foods. For the preparation of soups, for example, approx. 0.8 % is sufficient. The use of guar gum in the production of organic foods is possible (subject to the limitations), but this is conventional quality. Guar gum should be stored in a dry, cool and well-sealed place.
