Calcium Citrate E 333 – Tricalcium Citrate for the Food Industry
Calcium citrate (E 333) is the calcium salt of citric acid and is also known as tricalcium citrate. It is a white, odourless and tasteless powder with a crystalline structure. Calcium citrate is poorly soluble in water; however, its solubility increases at lower temperatures and in acidic environments (pH < 7).
Applications of Calcium Citrate
In the food industry, E 333 is used in a wide range of applications. Due to its properties as an acidity regulator, acidifier, emulsifying salt and complexing agent, it is found in numerous products.
Calcium citrate is used in a variety of foods, including:
- Dairy products: dried milk, condensed milk, milk powder
- Confectionery & desserts: gels, fruit spreads, puddings
- Preserved foods: canned fruit and vegetables, pre-cut and packaged fruit and vegetables
- Meat products: sausages, processed meat products
- Potato processing: peeled potatoes
- Organic foods: E 333 is one of the few approved additives for organic products (EU Regulation 2021/1165)
In addition to the food industry, tricalcium citrate is also used in the cosmetics industry as a raw material for further processing. Calcium is needed for the maintenance of normal bones and teeth. It also contributes to normal blood clotting and normal energy metabolism. Calcium citrate is suitable as a vegan calcium source, as it is not derived from animal products.
Properties & Benefits of Calcium Citrate
- Helps stabilise pH levels
- Supports food preservation as an acidity regulator
- Enables a uniform consistency in processed foods as an emulsifying salt
- Can be used as an organic calcium source in fortified foods
Calcium Citrate or Calcium Carbonate – What’s the Difference?
A frequently asked question concerns the difference between calcium citrate and calcium carbonate. When it comes to calcium absorption: while calcium carbonate is insoluble in water and only dissolves in acids, calcium citrate has higher bioavailability and can be absorbed more effectively in mildly acidic environments such as the stomach.
Further Information
Calcium citrate should be stored in a dry, cool place and tightly sealed.
